🧱 The Cells That Built Us
Long before it was a destination for premium baked goods and curated sips, 1012 University Avenue served a very different purpose. Built in 1935 with brick, heavy steel-lath walls and rugged concrete plaster, this historic structure originally operated as the 3rd Walker County Jail. For decades, its heavy iron cell doors held local history within its walls.
Today, those very same cells hold something far more inviting. We have completely preserved the rugged architectural bones of the building—from the original iron bars to the authentic Moravian tile and crown molding, every detail comes together to give Huntsville a memorable, lounge-style community space.

Our journey inside these historic walls began under a different banner. We originally opened our doors to the community as C.A.T. Cafe Bakery - Coffee, Art, Tea (March 2023) owned by Cat, The Quirky Baker; sharing our passion for scratch-made heirloom baking and comforting hospitality.

But as our community grew, so did our vision. We realized that our unique home deserved an identity that completely honored its past while paving the way for the future. To better reflect our deep focus on highly unique, premium, non-alcoholic drink formulation and artisan baking, we locked in our paperwork and officially rebranded to Cellblock Sips & Bakery (Sept 2026).​​

We have stepped entirely beyond the bounds of a traditional coffee shop. At Cellblock Sips & Bakery, we specialize in an immersive, beverage-forward experience. Our master menu features an expansive lineup of over 100 hand-crafted signature sips, including vibrant layered lemonades, premium loose-leaf botanical teas, and wellness-focused mushroom magic functional elixirs.

Every drink is systematically paired with small-batch treats baked fresh daily right here in the cells. Whether you are a Sam Houston State University student locking into a deep study session with our fast guest Wi-Fi (5M↨ fiber), or a local professional looking for your mandatory morning drink ration before clocking into a long shift, we have a table and a premium elixir waiting for you.
